Tony and I are sitting in a plaza in San Gimignano relaxing after a fantastic morning of learning to cook with our Master Chef - Costantino.
I thought we would be very hands on with the cooking but Costantino took control and cooked everything and we wrote notes and asked questions. Which was much better i think. We did the class with 3 ladies from America. Tony came along too.....cooking not being his speciality..... he was glad he did.
This was our menu for today:

We started with Tiramisu first and got that done and into the fridge.



Next was Fagottini di zucchini - zucchini strudel



Next step was hand making the pasta for Tagliolino Pesto - Pasta with Pesto sauce. I have a video of that and will try and upload it with this blog or in the next few days.

Next is preparing the chicken for Supremo al Pollo di Percorino - chicken stuffed with percorino cheese.


Costantino uses plastic gloves when working with chicken and his attention to cleanliness was impressive. After preparing each course he washes down and disinfects his bench to prevent cross contamination. He also disinfects his work space at the end of the day for our safety and also he said he never knows when the food inspectors might come. He said 1 year they didn't come at all and the next year they came about 3 times.
Next Costantino took us out to his herb garden - which is right next to our courtyard. There were quite a few herbs I haven't even heard of.



Back to the kitchen and start working on the pesto sauce for the pasta. Also he did a beetroot sauce for the chicken dish too......all done very easily......or he made it look that way!

All the preparation done we went outside, sat down at the table and waited for him to PLATE UP!
And here is the magnificent result of our cooking class today. We got to eat it all at lunch! Bellisimo!

Supremo di pollo al percorino - the chicken was coated in sesame seeds and served with spinach and beetroot sauce......yummy!

The piece de resistance - Tirimasu
What a fantastic Master Chef class we had today. Costantino was an excellent teacher and couldn't be more helpful with his information. It would have to be a highlight of Tuscany and needless to say we didn't eat dinner!


We all passed with flying colours and none of us were sent home!
